The Meltemi can run day and night for stretches at a time. The thermal push off the land builds through the middle of the day, so the afternoon is usually the strongest window and the wind often eases after dark. That is the general pattern of this wind, not a measured local onset.

Ierapetra sits at Crete's narrowest point, and the isthmus is what makes the spot. Meltemi comes over the island from N/NNE, accelerates through the gap and reaches the south coast offshore, typically 20-30 knots with gusts above 35. Near shore the water goes flat; farther out the Libyan Sea puts swell under you, and whether the whole stretch is really flat or just chop with small waves is unconfirmed.
The flat strip is the trap: offshore wind plus a reported offshore current turns a broken line or a lost board into a drift toward open water. Intermediates and up only, and only with dependable upwind.
You launch off a working town seafront with parasols, swimmers, restaurants behind you, a mole and wave breakers, so from June to August the beach is crowded before the wind arrives. Ierapetra Watersports runs supervised lessons and rentals on the same seafront, but whether it would come out for an independent kiter is unconfirmed.
Core season is June to September, sometimes given as May to October, and summer water sits at 24-27 C, which is lycra or shorts.
